Abstract
Gelatin consists of connected collagen filaments, which are also apparent in human tissue. In this study we characterized the chemical exchange saturation transfer (CEST) properties of gelatin. The exchange rates of three exchange effects at 1.9, 2.7, and 3.6 ppm were calculated using Ω-plots. A small aliphatic relayed Nuclear Overhauser Effect (rNOE) exists between -2 and -5 ppm. The results allow using Gelatin as a model system for CEST-studies and may help to interpret results from CEST-measurement in vivo correctly.
